Making Cocktails at Home

Making cocktails at home doesn’t have to be difficult, and you don’t have to spend crazy money to do it! Here’s some equipment that might be useful, and some cheap alternatives that will work perfectly fine on your kitchen counter: 

  • A cocktail shaker is ideal, but in a pinch it can be replaced with a strong mason jar. 

  • Strainers are essential behind a busy bar, but at home, you’ll do just as well with a mesh sieve. 

  • Many cocktails need to be stirred with a bar-spoon, but using the long end of a normal spoon should do just fine. Pro Tip: Chopsticks do a wonderful job at stirring down a drink. 

  • Crushed ice - cubed ice, a bag and a hammer will do wonders.

  • Lovely glassware is great, and use the recommended glasses in this article as a guide, but use whatever you have at home. It’s supposed to be fun.

  • Simple syrups. These can be store-bought but are cheaper to make at home. Simply combine equal parts sugar (white, brown or demerara) with hot water and dissolve. You’ve got a homemade syrup ready to impress! Fresh is always best.

Mojito

If a cocktail is ever to put a smile on your face, it’s this one.

Ingredients
50ml white rum
5 basil leaves
15ml lime juice
20ml strawberry syrup
Soda water
Garnish: basil sprig and strawberry slices

 Method
It’s very easy to make the strawberry syrup by adding water, sugar and strawberries to a pan in the ratio 1:1:1/2. 12 or so minutes of medium cooking will dissolve and infuse everything, before straining into a jar. Use once cool or refrigerate for up to a month. Other than that, it’s a classic mojito method – muddle the basil gently with the syrup and lime juice, pour in your rum whilst adding ice and top up with soda water. Delish.

Piña Colada

The Remarkable £93,750 Dalmore Whisky

Now and again in the world of whisky a creation comes around that demands attention, but few, if any, like this. The recent sale of The Dalmore Luminary No.2 ‘The Rare’ marks an extraordinary meeting of tradition, art, and architectural brilliance, all converging to create a historical masterpiece. This exceptionally rare 49-year-old single malt, housed in a stunning glass sculpture co-created by Melodie Leung of Zaha Hadid Architects, fetched a remarkable £93,750 ($117,400) at Sotheby’s, with all proceeds donated to V&A Dundee – who were also involved in its conception.

The journey of Luminary No.2 began as a unique collaboration between the V&A and The Dalmore Distillery, renowned for its exquisite single malts. The partnership, initiated in 2020, aims to inspire through design, leveraging the rich heritage and innovative spirit of both institutions. This project is the second release in The Luminary Series, a three-part partnership celebrating the fusion of whisky craftsmanship and contemporary design.

At the heart of this prestigious collaboration lies the remarkable glass sculpture designed by Melodie Leung – an ambitious endeavour in itself. This piece is not just a container for the whisky; it’s a representation of the meticulous process of whisky making itself. Crafted from a continuous piece of glass, the sculpture embodies the layers of age and the intricate interactions of flavours developed over nearly five decades. Fiaz Elson from The Glass Foundry played a crucial role, using a handmade mould and carefully managing the kiln temperatures over a tense 12-week period. The result is an 80kg sculpture with a liquid-like texture and a high gloss finish achieved through over 500 hours of hand polishing. What a thing of beauty.

The whisky inside this artistic vessel is equally remarkable. Created through the combined expertise of The Dalmore’s master whisky makers Gregg Glass and Richard Paterson OBE, Luminary No.2 ‘The Rare’ is a testament to their skill and dedication. The whisky was matured in American white oak ex-Bourbon casks and finished in an assemblage that includes a rare Port Colheita Pipe 1963, an exceptionally rare 30-Year-Old Apostoles Sherry Cask, and select Bourbon barrels. But it’s not done there!

The final touch was a finish in a 1951 Virgin oak hybrid cask, air-dried at The Dalmore and hand-toasted by Gregg Glass himself. The result of this unique finish process is a rich and nuanced whisky with aromas of Madagascan vanilla, rich dark berry fruits, cinnamon, and dark cacao, complemented by a palate of freshly roasted chestnuts, blackcurrant, Doyenné pears, and soft patisserie spices, finishing with notes of sugared almonds, plums, roasted Colombian coffee, and a hint of sweet wood smoke. Just three bottles and two sculptures have been made. Oh, to have just a sip.

The Dalmore’s commitment to design and community is evident in their decision to donate all proceeds from the sale to V&A Dundee. This generous contribution supports the museum’s mission to generate joy, spark curiosity, and deepen social impact through design. Leonie Bell, Director of V&A Dundee, emphasized the importance of this partnership, highlighting how it brings together the worlds of design, whisky, and Scottish heritage in a meaningful way.

You potter on down to your favourite local Japanese restaurant, sit down with the all too familiar menu and find yourself pursuing the delights of the drinks menu. Something new catches your eye on the menu, it might be listed as ‘plum wine’. You ask yourself: what on Earth is Japanese Plum Wine? So you order. A delightfully sweet, tart and elegant beverage finds its way to your table, and you’re hooked! 

Whether you fall into the above category or you're simply an enthusiast for the wonderful niche spirits and liqueurs of the world, today we ask the question, What is Umeshu? Commonly referred to as Japanese Plum Wine, although that’s not really an accurate descriptor. Let’s dispel some myths, find out if it's for you, and hopefully introduce a whole new world of delightful drinks.

Is Umeshu For You? 

Umeshu covers a wide scope of flavours, but there are still things you can expect that might help answer if this is even for you. After all, nobody wants to spend money on things they ultimately will not enjoy. Here is a baseline list that might help you make your mind up. Umeshu is for you if: 

  • You love some bubbles. 

  • You enjoy dessert wines - since Umeshu is actually a liqueur, it’s quite sweet.

  • You enjoy notes of exotic fruits and citrus - and, obviously, plum. 

  • You’re looking for something new to spice up your drinking life. 

  • You love exploring the flavours of different cultures. 

Umeshu for Beginners

The first notions of Umeshu date back around 300 years - relatively recent in the scope of drinks history - and are found in an incredibly old Japanese cookbook. The exact history is a mystery, however it’s safe to assume that the above-mentioned time-frame is about right, as sugar was a commodity only for the rich in those times in Japan. As such, only the wealthy would be drinking anything with sugar. Umeshu can actually be traced further back in China, where plum liqueurs were a well established elixir. 

It’s worth noting that while Umeshu is commonly referred to as “Plum Wine”, the production method is not a wine at all! Umeshu is actually a liqueur, but it certainly can be, and often is, drunk like wine.  It can easily be made at home, and is a household staple for many Japanese families. Different regions have their own traditional recipes, and there is plenty of scope for experimentation, unlike certain other liqueurs and wines that have very strict rules about their creation.

Umeshu is made using unripened “ume” plums and sugar, and then steeped in a pre-made liqueur. Anything can be used, however potato-based shochu is most common for household recipes. They’re then fermented in airtight containers until ready to serve. Did you know? Ume fruits are actually poisonous if eaten raw, but completely safe to consume once fermented.  

Common UMESHU Terms and Phrases you Should Know

It is common to add other fruits to get more complexity, and these additions will be labelled on the bottle. As is the case with many Japanese spirits and liqueurs, labelling terms can be complicated. We’ve broken down the terms you’ll find on Umeshu bottles: 

Nigori: These Umeshu are unfiltered, which essentially just makes them cloudy. Expect these to be a little bolder, and a smidge funkier.

Genshu: Genshu is a particularly intense, rich form of Umeshu that has no added water.

Koshu: Like many good wines, spirits and liqueurs, Umeshu benefits from ageing. Koshu simply means that it’s been aged. This adds depth, complexity and mellows out some of the harsher flavours.

Sparkling: This is self explanatory, but sparkling Umeshu is delightfully bubbly and rivals even the liveliest natural wines. 

Umeshu can be enjoyed neat, over ice or in cocktails. Best served chilled, straight out of the fridge.
