In the UK we have a summer which, like last year can be very hot and last for weeks and weeks, but this is not the norm. The British summer is usually a lot more fickle and we may get the odd weekend of beautiful weather, but traditionally this won’t fall over the holiday weekend in August.

However, 2023 has been warm so far, in fact we have just had our warmest June on record, so in anticipation of another hot summer, I have put pen to paper to suggest some great whiskies for hot weather.

These may be heavier whiskies, but they make an astonishing highball, or sour cocktail, or lighter whiskies to sip over ice, or by themselves on a balmy summer evening in the sun.

Glen Moray Classic

I continue to come back and back to this whisky. It is such great quality versus what you have to pay for it. It can be found in so many shops, so is easily available, and is on offer reasonably frequently. A classic by name and a classic by nature. It is sweet with honey and fresh red apples, vanilla and a little lemon zest to keep things interesting. A great way to get the summer started. In a highball, over ice or sipped alone. This is a wonderful summer whisky.

Bankhall

This is an exciting new arrival from Bankhall distillery in Blackpool. A single cask to start with which includes some of the first liquid to come off the stills in March 2020. Made with English Barley and matured in a char 4 virgin oak cask for just over three years, only 225 bottles were produced. This would be the perfect whisky to sit on Blackpool beach and contemplate the growth in world whisky over the last five or six years. This whisky might be young, but it has plenty of vibrant flavours with vanilla and orange marmalade, butterscotch and mint leaves with tinned peaches. With a high abv, this drinks very well over ice on a hot day, and I’d be very happy if I was the head distiller Vince Olsen. Let’s just hope he makes more of the same.

Bushmills 10

From Scotland to England and now to Northern Ireland. Here we have a tropical dessert of a whisky. Lots of sweetness and freshness from a whisky which screams it’s from Ireland. This whisky is fabulous by itself, but with all the tropical fruit flavours and vanilla it is great in a whisky sour. Tart lemon and mangoes fizzing around the palate is brilliant on a summer’s day. Just don’t put too much sugar syrup in the cocktail as it hides all the delicate notes in the whisky.

Back to England and we have another new kid on the block, this time from the Spirit of Yorkshire distillery. Using 100% home grown barley, and ex bourbon cask maturation, this is a sweet whisky which is great with simple ice and soda. To be able to make a good highball, the whisky has to be very good as any imperfections are brought out by the dilution, and this is certainly a well-made whisky. I’d suggest if you’re having a staycation in England this year, why not make the whisky English too?

Masthouse Copper Rivet by Berry Bros & Rudd

Here we have yet another English whisky. This one is a little older than the other two at around 6 years old. Made in Kent, this is matured in the south of England and the warmer weather seems to have made a difference. There are complex fruit flavours and rich vanilla. This will stand up to cocktails, highballs, and at 59.7% pretty much anything you want to throw at it, it’ll handle well with its intensity of fruit and sweetness, a great young whisky from Berry Bros & Rudd. Very hard to find, I would suggest this is one for the serious whiskey fiends to find at auction. Expect it to fetch a lot more than the distillery’s own bottlings, and if you have no luck, maybe try a standard bottle and see if you like the flavours.

Orkney 2006 Berry Bros & Rudd

We finally make it back to Scotland in this round robin of the best summer whiskies the UK has to offer. Another dram from Berry Bros & Rudd and another big, intense whisky. This, like many Orkney whiskies before it has a lovely salinity which refreshes the palate on a hot day. But having been matured in an Oloroso Sherry butt, there is also richness and sweetness to balance out any cocktail. Although I would suggest this is a really good sipper. Perhaps with a little ice if wanted. With black cherries and black cracked pepper, this will liven up the pallet.

Glasgow Red Wine and Ruby Port Cask Finish

This is a whisky which I would drink as a sipping dram in the cooler months, with its big rich red fruit flavours, spice and sweetness coming from dark sugar and manuka honey. Added to that is a high abv, but with plenty of ice in a tall glass and add soda and it gives a glorious fruity summer fruits forward highball. Six casks were married and there were only 1925 bottles produced, but there is still a decent amount around for now. It’s not complicated, and it’s delicious. So, give it a go!

Glenglassaugh Sandend

Having been closed for 20 years, Glenglassaugh fired up its stills again in 2008. Finally, they have a new core range which is really worth shouting about. I have chosen for this article the Sandend expression. I’ve tried this on the beach in front of the distillery as two different cocktails, I’ve tried it straight up at 50.5%, and with soda, and I love it! It is created with ex bourbon, sherry, including Manzanilla casks which give a fresh sea breeze nature to the whisky. It is fruity, sweet, a touch of spice, and all these things combine to feel like you’re by the sea in the sun. So, head to a beach, or close your eyes with your feet in a bowl of water, and sip away!

There are so many great whiskies to drink during the summer months, these are my favourites at the moment, but if your lost for choice, then a good rule of thumb would be to try something from an ex bourbon cask, high strength for highballs, and a little richer in style for a sour. We like to picture bitters as the seasoning of the drinks world. Salt and pepper are in almost everything we cook, and just like them, bitters can add that touch of something to a cocktail to take it to that next level.

Bitters actually began as a medicinal product, with companies like Angostura infusing spirits with bitter ingredients like bark and certain herbs. These days you can find all kinds (like chocolate, which is dark and rich rather than bitter), and because they’re so intense and concentrated, you’ll usually find them in small bottles with teeny tiny droppers so they’re great value for money.

You can read more about the different kinds of bitters here, including a delicious chocolate flavour from Fee Brothers! For now though, let’s go through 5 tasty cocktails that show off exactly how fantastic chocolate bitters can be in mixology!

The Left Hand – for the bourbon lovers

The Left Hand is an evolution of the Prohibition-era Boulevardier, which is basically a bourbon Negroni. Without knowing the history of the cocktail, Sam Ross at Milk & Honey created something similar using chocolate bitters, which pull the cocktail into an exciting new direction. They round off the spiced smoothness of the bourbon and vermouth, temper the Campari sharpness and add some indulgent complexity to the mix.

Ingredients
45ml bourbon
20ml Campari
20ml sweet vermouth
4 drops chocolate bitters

Method
Add everything to a mixing glass, stir well with ice and strain! A cherry makes the perfect garnish but it’s not the end of the world if you sip as it is!

The Swizzle – for the rum lovers

There are a lot of variations of this, some leaning towards coffee, others whiskey, and others rum! The rich coffee, the caramelly notes from the rum, and the cocoa bitters all work so well together with the creamy sweetness of the coconut cream to add a different texture. Lime juice brightens and lifts the mix-up for a reinvigorating and rich profile that will definitely leave you wanting more.

Ingredients
45ml dark rum
20ml coffee liqueur/espresso
3 drops of chocolate bitters
15ml lime juice
15ml coconut cream
Cinnamon stick (optional garnish)

Method
Half-fill your glass with crushed ice, and pour everything in. Now for the swizzle! You can use a swizzle stick, or barspoon, but you simply need to submerge the utensil below the ice and hold it between your palms. Then, as if you’re starting a fire, rotate between your palms until it’s thoroughly mixed! 

Widow’s Kiss – for the cognac lovers

The original recipe for this goes way back to George Kappeler’s Modern American Drinks guide in 1895, using two French herbal liqueurs and apple brandy. It’s changed over the years and in celebration of The Three Drinkers in Cognac, we’re going to use a cognac rather than apple brandy. This Widow’s Kiss packs a punch, with fruits, honey, herbs and chocolate subtly marrying for a gorgeously rich and warm creation which could be served after dinner or as a nightcap. Deliciously bold.

Ingredients
50ml cognac (VS or VSOP)
20ml Yellow Chartreuse
20ml Bénédictine
3 drops of chocolate bitters
Cherry (optional garnish)

Method
Super easy this, just stir all your ingredients with ice and strain into a chilled glass. Yum!

Squeaky Wheel – for the mezcal lovers

This takes the Negroni framework and shakes it up into a smokier, richer number. Created by Nicholas Bennett of Cedric’s at the Shed in New York, the signature earthy smokiness of the mezcal complements the coffee gorgeously. Almond-flavoured, sweet amaretto is offset by bitter citrus for brightness, and the swirling chocolate bitters bring a spicy richness. So much flavour but with no harsh ages, this is truly stunning.

Ingredients (for a jug)
40ml mezcal
30ml bitter orange apéritif (Campari or Aperol)
20ml coffee liqueur
15ml amaretto
2 dashes of chocolate bitters
Orange twist (optional garnish)

Method
Stir around ice to combine and strain into an ice-filled glass. For a nice touch, rub an orange wedge around the rim before dropping it in as garnish. Voila!

Espresso Martini – for the vodka lovers

One of the most adored cocktails of the last few years, this in-your-face cocktail is perfect for a chocolate bitters addition. Bitterness, sweetness, frothy Espresso, smooth and crisp vodka, and now richer chocolate bitters for a Mocha Martini style twist. They add warmth and dark chocolate notes without the sweetness, keeping this cocktail in perfect balance.

 Ingredients
40ml vodka
20ml coffee liqueur (like Kahlúa)
25ml cooled espresso
3 drops chocolate bitters
1 tbsp syrup
Three coffee beans (garnish)

Method
Cocktail shakers out, then simply shake everything with ice and pour into a pre-chilled cocktail glass! Equally perfect after meals or at the bar!

There seems to be something to celebrate every day of the year these days, from World Whisky Day to World Knitting Day. Don’t get me wrong, any excuse to celebrate is a good thing, but some days are more meaningful than others. The 4th of July may have different meaning for different people, but it is a significant day of the year and gives me a chance to put my American tastes to the fore. This year for me has been a memorable year for American Whiskey, there has been more American whiskey launched in the UK than ever before and in the USA the proliferation of craft distilleries continues. Here are four bottles that I think are the best value bourbon of all time, the best release this year by a long shot, a classic and a curve ball - all of which you’re going to want to try!

This is brilliant value and also brilliant quality. With rich caramel and vanilla flavours, the corn flavours really shine. There is still a touch of spice to keep things interesting and it is so smooth considering it is at 43.2%. This is on special offer frequently in the UK, so look out for it in Ocado and Sainsbury’s where it can be found for only £25 a bottle! Usually it is a little more than that, but I still think it represents great value. The Reserve makes a very good whiskey sour and old fashioned and if you’re looking for something a bit different then the Rye Woodford makes incredible Manhattans too.

This has been a long time coming. I first tasted this in November last year at the IWSC awards ceremony in London with a big bunch of Scotch whiskies and it really shone through. It has big bold flavours but at the same time there is finesse and elegance and great complexity. It is 17 years old and has quite a high abv, but the alcohol is so well integrated that the depth of flavour still shows well. Big, rich caramel and baked orchard fruits, caramelised banana and demerara sugar mix with dark chocolate and soft spice. It’s a blockbuster, but well worth it.

The Classic: Elijah Craig

Elijah Craig were the first to char barrels in making their whisky, and it has become a classic over the years. So popular in fact that they have had to discontinue their 12 year old release as the pressure on stocks is so high. They replaced it with this brilliant expression. Made in very small batches is oozes smoothness at a reasonably high abv. With flavours of marmalade, honeycomb, baked apples and a dusting of cinnamon and charred oak on the finish, there is a lot to like here. It’s a great introduction to top end bourbon if you’re exploring American whisky, and not so pricy that it can’t find it’s way into the odd cocktail, and the cocktail would thank you for it.

The Curve Ball: Never Say Die

Never Say Die is a relatively new brand on our shelves. It is a Kentucky Straight Bourbon (meaning it has had more than 2 years aging). But what makes this different is it’s matured in the UK. The barrels are shipped from the USA, aged and bottled in the UK. It’s a belter of a whiskey, made up from 75% corn, 21% rye and 4% malted barley, with a very high abv, the flavours of vanilla, citrus and spice with leather and caramel all shine through. It’s as close to an English Bourbon as we’ll see. Made in very small batches, there is still some of barrel number four left, but they only made 226 bottles! I suspect, that future releases will be as good as this one.

The shelf life of the half-finished bottles in your cupboard depends completely on the alcohol percentage, ingredients, and drink type. So, whatever leftover bottles you have sitting there, check in with us for how long each one will keep for because you may just be surprised!

General guidance for storing alcohol

Different drinks obviously vary in how long they last, but there are some general tips to follow.

Overall, drinks tend to be safe to drink as time goes on but gradually lose flavour. This will vary from bottle to bottle though, so just keep your nose peeled (if that’s a phrase) and see for yourself if the drink is still enjoyable. If there’s a considerable colour change, a strange smell or curdling then its drinking days are behind it!

Bottles are best kept upright and tightly sealed to minimise contact with air and should always avoid direct light and heat. If you want to be even more organised, it’s a good idea to write the opening date somewhere so you can check before revisiting. Also, smaller amounts of leftover liquid suffer at an exponential rate. Basically, decanting into smaller bottles will help any drink last longer and if there’s only a little left in the bottle, you’ve got less time to finish it before it deteriorates! The fuller the bottle the fuller the flavour!

Pretty much, unless you leave an open bottle of gin in direct sunlight or right by a radiator, the higher-proof bottles have an indefinite shelf life once you open them.

Still though, the taste will gradually change as it reacts with oxygen in the air, and the botanicals will alter and diminish in intensity. You’ll notice this more if you have only a little gin left in the bottle, so try and finish off ‘the dregs’ ASAP. If stored properly, you shouldn’t notice a big drop off in quality if you finish them 1-2 years after opening.

In terms of flavoured gins, natural ingredients and sugars will be involved and they deteriorate at a faster rate so keep them refrigerated and aim to finish them within six months.

When it comes to preserving itself after opening, vodka is a hardy spirit. The taste is so mild with plain vodkas that there won’t be significant flavour loss, and it lasts for decades.

As with the gin however, as time goes on, the subtleties of the notes may suffer so if it’s a premium spirit, you’ll want to finish it within a few years from opening (although if it was that good in the first place that shouldn’t be a problem!).

Storing vodka in the freezer is probably the best way to preserve it, and because of the alcohol in it, it won’t actually freeze. Domestic freezers are too warm to freeze vodka and will actually create a more viscous texture which some people love.

Similar to gin, flavoured vodkas with those extra sugars have shorter shelf lives and the flavour will fade noticeably faster, so finish them within 18 months.

You can treat tequila in the same way as other distilled spirits. If it’s stored in sensible conditions then you’ve got a long time to finish the bottle. The flavours are likely to be stronger than that of a vodka, so you’ll still want to finish it within a couple of years, but it will take an awfully long time for any noticeable decrease in quality to appear.

Creamy liqueurs like Baileys and Advocaat are the subject of more debate than most drinks when it comes to how long they last, but they’re more resilient than you might think.

Baileys contains milk and a decent helping of sugar too, so the flavour will deteriorate much faster than a high-proof pure spirit. But according to Baileys official guidance, it lasts 2 years from the day of bottling if stored at a reasonable temperature. So we’d recommend finishing it within a year of getting it to enjoy optimum quality.

Something like Advocaat with eggs as well as milk involved will hold up worse and should be finished within 6 months of opening.

It’s not essential to store cream liqueurs like Baileys the fridge if you haven’t got any room, but it’s preferable. However, the most important thing is to avoid higher temperatures and sunlight so anywhere cool and dark will do the job.

If you know it’s been a while since you opened it then check for curdling before you swig and always resort to the use-by date brands print on bottle.

Vermouths like Martini are fortified wines that oxidise quickly so once opened, store in the fridge and drink within a maximum of three months but ideally finish it within the first month.

After that point, there will be no harmful effects to you, but the taste will be pretty nasty. There’s no point ruining a cracking cocktail by adding a splash of fusty vermouth at the end!

Unopened vermouth is a very different story however and should be fine for up to two years as long as it’s kept in a cool temperature. Vermouth doesn’t age well so don’t think it’s getting better and better by letting it sit there.

The pirate’s favourite is one of the most indestructible spirits. Even once opened, it’s perfectly safe sat in a cool, dark area for decades.

As with other high-proof spirits though, the more oxygen that reacts with the liquid the slighter changes that will happen over time so there’s nothing to gain by leaving it this long.   

Aim to polish it off before 2 years to guarantee full aroma and taste, but really there’s no rush.

You’ve probably guessed by now but rum liqueurs such as Malibu have a shorter shelf life, from six months to two years, as the flavour fades over time.

It isn’t essential but you should try to keep this in the fridge and keep an eye out for mould forming if it’s been a while.

Both Ruby and LBV (Late Bottled Vintage) port and pretty much all forms of fortified wine stay drinkable for up to two weeks after opening, but it’s a race against time from the minute it’s open and it wouldn’t be unusual to notice a drop off in quality after only a couple of days.

Tawny ports generally last longer (up to two months) while vintage ones should be supped within a couple of days. It’s best to pop it in the fridge to optimise longevity, but if it’s getting towards the three-month mark then you’ll almost certainly sense a vinegary taste.

Unopened bottles of whisky and brandy last indefinitely if sealed properly and kept in a cool, dark place. Unlike wine, its maturing stops once bottled so you won’t notice more flavour but at the same time, it won’t degrade.

Once opened, they remain hardy because of the high alcohol percentage but the nuances in aroma and flavour may change and gradually fade after two years, though it’s completely safe to drink way beyond that point.

Wine is probably the most talked about drink in terms of the question, ‘how long does it last?’

A lot of that is because opinion differs so follow your nose! Generally though, white is at its absolute best from the moment it’s open and you should aim to finish it within 24 hours. Until two days after opening, it’s unlikely that you’ll notice much difference and even after one week, it should be fine to enjoy.

Storing the bottle in the fridge is best practice, ideally with its original stopper. It’s worth mentioning that although the acerbic taste will develop as time goes on, it’s not dangerous to drink in anyway.

Unopened bottles of white are generally best drunk within a year of purchase but vary from bottle to bottle. Even if the wine is 1 or 2 years beyond the printed expiration date, it’s well worth the sniff test because it’s probably still fine to sip on if it’s been stored sensibly!

Generally speaking, there is little difference between how long white and red wines last compared to one another. Red wine oxidises at a slightly slower rate than white, but many prefer how white holds up in the days after opening so it’s down to personal preference.

Both should be refrigerated and tightly sealed, and you’ll find that most bottles of red are good for at least a couple of days but should be finished within 24 hours for the ultimate experience.

In terms of unopened bottles, most mass-produced reds are best drunk within five years but some can improve over time if stored in a dark, dry, cool spot. Many wines simply don’t have the structure for good aging, and most are best enjoyed shortly after buying.

Bottles of opened fizz last for up to three days if they’re sealed with a stopper in the fridge but once the cork pressure disappears, the fizz will very sadly fade away, although the flavour should be okay for a while longer.

Traditional method fizz like Champagne and Cava stay bubbly for longer than sparklers like Prosecco which can go flat within the day. Unfortunately, the whole ‘putting a spoon in the open bottle’ to keep the fizz is a myth, although some people swear by it so who knows!

Non-vintage fizz should still be cracked open within 3-4 years because even sealed, the flavour and effervescence will begin to falter.

Father’s day is just around the corner, and this always begs a question for me. My father, although not greatly knowledgeable about whisky, does like to drink it fairly regularly.
