Irish Spring

Glendalough Gin cocktail Irish Spring

It doesn’t get much simpler than this! Using Glendalough’s Wild Botanical gin, sustainably hand foraged from the mountains around the distillery, this cocktail is light, refreshing, and a perfect sip for a Spring day… or any day to be quite honest!

Ingredients
60ml Wild Botanical Gin
20ml Fresh Lime Juice
20ml Simple Syrup
Garnish with Fresh Mint

Method
Shake up all the ingredients in a cocktail shaker and strain into a chilled coupe glass. Or for a longer version, this can be built over ice in a highball glass and topped with soda water.

Words by Aidy Smith

If you’re anything like me, marmalade goes on pretty much everything, even a cocktail! Interestingly, the tartness, sweetness and orange punch work hand in hand with gin, so perhaps this is a new alternative to the breakfast martini?!

Ingredients:

60ml Quality Gin (we recommend Highclere Castle Gin)
15ml Lemon Juice
4 teaspoons of Quality Marmalade

Method:

Pop all of the ingredients into a shaker and stir to combine the marmalade with the liquid. Pop in your ice, shake and fine strain into a glass (we strain to avoid lumps of marmalade in the glass). Et voila!
